Whoopie cookies with sprinkled sugar

Whoopie cookies with sprinkled sugar

What you will need


For the cakes part:

1/2 cup premium cocoa powder

1 1/4 teaspoons baking soda

1 large egg

2 teaspoon salt

1 cup well mixed buttermilk

1 teaspoon vanilla

1 stick (1/2 cup) unsalted butter, softened

1 1/2 cup packed brown sugar

2 cups all-purpose flour

1/8 cup white sugar


For the inside good stuff:

1 1/4 cups confectioners sugar

1 stick (1/2 cup) unsalted butter, softened

2 cups marshmallow cream

1 teaspoon vanilla



Making the cakes

Preheat oven to 220 c.

Mix all together flour, cocoa, baking soda, and salt in a bowl until well mixed.

In a separate medium bowl mix together buttermilk and vanilla.

Mix together brown sugar and butter in a large bowl with an electric mixer at medium-high speed until pale and fluffy, this should take about 3-4 minutes on a handheld mixer. After your happy with it add the egg, beating until combined into the mix.

Slow down the mixer speed to low and mix in the flour mixture and buttermilk separately in small portions, make sure you start and end with the flour, Keep all the outsides scraped to the center, and mix it until smooth.

Put a spoon 1/4-cup mounds of batter about 6 cm apart onto 2 buttered large baking sheets. Alternate the position of the sheets in the oven so you get a even bake. The tops should be puffed and the cakes spring back when touched, 11 to 13 minutes. When cooked transfer onto the rack to cool down.

Make filling

Mix together your butter, confectioners sugar, marshmallow, and vanilla in a bowl with electric mixer on medium speed or until a smooth texture develops. It took us about 3 minutes.

Its time to Assemble the Pies:

Spread a rounded tablespoon filling on flat sides of half of cakes and top with remaining cakes.

When all done sprinkle a some white sugar of the tops!
