Spaghetti with Cherry tomatoes & Monte Rosso olive oil

This is the perfect mid-week dinner, simple, quick but very tasty.

  • 500g of good quality spaghetti
  • 100ml Monte Rosso olive oil
  • Salt & Pepper
  • 3 cloves of garlic
  • 1 cup of cherry tomatoes
  • 1 red chilli
  • 2 tbsp drained capers
  • 2 tbsp chopped parsley
  • 4 tbsp shaved parmesan cheese
  • 20ml Monte Rosso olive oil to finish


Firstly bring a large pot of salted water to the boil and add your spaghetti (cook based on the packet instructions).

While your pasta is cooking add 100ml of Monte Rosso olive oil to a large frying pan and set to a medium heat. Roughly chop your cherry tomatoes, garlic and red chilli. Add to the frying pan a cook till the tomatoes start to blister, stir in the capers and parsley and season to taste.

Strain the spaghetti and add to the frying pasta, stirring constantly for 2 minutes. Remove from the heat and twist on to 4 plates. Drizzle extra finishing Monte Rosso oil and sprinkle with parmesan cheese.

*Hint: add prawns or squid to elevate this dish for a dinner party
