Picnic Pasta Salad

I’s summer and that means picnic time, and nothing says summer like a good old pasta salad. Now we love mums classic 80’s pasta salad but now we’re all getting older it’s time to start our own traditions, so why not start with the Pasta Belly Perfect Picnic Salad?

Picnic Pasta Salad

Serves 8 as a side dish

 

Ingredients. 

 

1 Packet of Pasta Belly Fusilli

1 Tsp. Salt flakes

1 Punnet of cherry tomatoes

1 Cup pitted black olives

1 Tub of bocconcini

200g Spicy Salami

2 Tbs. Chopped Basil

2 Tbs. Chopped Parsley

1 Clove of garlic crushed

2 Tsp. Sherry Vinegar

2 Tbs. Monte Rosso EVOO

Salt & Pepper

 

Method.

 

Start off with a big pot of water with your teaspoon of salt added, on your stove bring to a rolling boil and add your Pasta Belly Fusilli pasta & cook for 8 minutes, you don’t want to over do it! Once cooked drain and toss in cold water from the tap, you don’t want to keep cooking is or it will get soggy! Once nice and drained from the cold water add to your picnic vessel ready for construction.

 

To prepare your salad ingredients slice the cherry tomatoes & black olives into quarters, your bocconcini in halves and spicy salami into strips. Toss through the cooled pasta along with your herbs.

 

Time for the dressing, in a small bowl mix olive oil, salt & pepper, crushed garlic & sherry vinegar to combined. Pour over your pasta mix till you have a nice even coating. Pack up and serve as a delicious side for your other picnic favourites.
