In a recent study some Spanish researchers from the Lipids and Atherosclerosis Research Unit of the Reina Sofia University Hospital, discovered that a diet rich in olive oil or other monounsaturated fats could improve the arterial function of elderly individuals!
The study they published in a American Journal of Clinical Nutrition, compared a Mediterranean style diet rich in olive oil with that of a low fat with a high carbohydrate diet (pasta, potatoes, rice) and then a diet rich in saturated fats (olive oil).
They concluded that a diet rich in olive oil actually resulted in the reduction of endothelial damage and dysfunction, in English terms its a layer of cells that line the inner walls of the arteries that help the blood circulate smoothly.
According to the Spanish researcher Javier Delgado, who is one of the principal authors of the study, mentioned that these measurements suggest that the endothelium of blood vessels are less affected by the deterioration associated with age when following a Mediterranean diets that is based on olive oil, he also added that “These findings are linked to increased protection against future cardiovascular events”.
