Hot Cross Bun Bread & Butter Pudding

Hot Cross Bun Bread & Butter Pudding


6 Traditional Hot Cross Buns

3 tbs. Butter

4 Free range eggs

¼ cup Caster sugar

1 tsp. Vanilla extract

1 cups Whole milk

350ml Whipping cream

2 tsp. Orange Zest

2 tbs. Spiced Rum

1 tsp. Cinnamon

2 tbs. Brown sugar





Pre-heat over to 180 degrees.

Cut your hot cross buns in half and butter both sides, lay the bases butter side down in a large baking tray, slightly off centre to the bases add your tops, cross side up.

In a  mixing bowl add eggs, caster sugar, vanilla extract, milk, cream, orange zest and rum, lightly stir and pour directly over the hot crossed buns. Dust the top with cinnamon and brown sugar.

Bake for 45 minutes on 180 degrees, remove and serve with vanilla ice-cream and a Lady Marmalade spiked coffee.
