170g salted butter
170g cups all-purpose flour
1 teaspoon salt
300g cups sugar
320ml full cream milk
20g baking powder
Set yourself up for success and preheat your oven to 180 degrees. Set to the side your eggs and butter and let them settle to room temperature. Butter up and flour two cupcake/muffin pans or insert paper cupcake cups.
Grab you mixing bowl and mix together the salt, baking powder, and flour.
Beat your butter up with an electric mixer on high for 2 minutes- So it looks nice and fluffly. Then add in the sugar and beat with the mixer until combined. Continue to beat and add the eggs and vanilla.
Add part of the flour mixture to the butter mixture. Then add some of the full cream milk. Set yhe mixer on low and continue to mix. Continue alternating like this until all of the milk and flour mixture have been added. Mix well.
Pour into cupcake pans, filling to about halfway.
Bake for 20 minutes, or until the cupcakes are golden brown. For a golden oldie trick get yourself a toothpick and when you poke the cupcake it should come out clean from the center. Cool for at least 15 minutes before removing from pans.
225g salted butter.
800g confectioner’s sugar, sifted
1 tablespoon pure vanilla extract
45g heavy cream
Small pack of Sprinkles
Using a paddle beater, beat softened butter in the mixer speed for 3 minutes.
Add sifted confectioner’s sugar and stir on low until well mixed.
Add the vanilla extract and heavy cream. Mix on medium-high for 4 minutes, stopping to scrape the sides once or twice and place back into the center.
If a thinner frosting is desired, add additional heavy cream 1 tablespoon at a time until desired consistency is reached.
Add your sprinkles.
