Earl grey cheese cake
Earl Grey is a lovely way to start the day, but why not combined you tea and biscuits into a delicious Earl grey cheese cake. The Julius Mienl Earl grey tea is perfect for this recipe, it has a strong and luxurious flavour, that will balance out the sweet strawberry topping.Yum
1 packet of digestive biscuits
55g of butter – room temperature
1 tbsp sugar
1 tbsp lemon zest
350g of cream cheese – at room temperature
½ cup of sugar
1 tsp vanilla essence
1 whole egg
1 egg yolk
¾ cup of thickened cream
4 Julius Meinl Earl Grey teabags
1 punnet of strawberries
1 tbsp icing sugar
1 tbsp lemon juice
1 Julius Meinl Earl Grey tea bag
Preheat oven to 180c
Grease the side of a 20cm spring form pan and cover the base in baking paper.
For the base, using a wooden spoon crush your digestives into a fine crumb and mix well with your butter, sugar and lemon zest. Evenly push the mixture into the base of the spring form pan and ensure it’s pressed tightly.
For your filling add double cream to a pot on a low heat, add 3 of your tea bags and then rip the 4th open and tip tea into the cream, along with vanilla essence. Allow to simmer on a low heat for 10 minutes, ensuring it doesn’t split. Squeeze out the 3 whole teabags and set aside to cool.
Start to mix your cream cheese, sugar, whole egg and egg yolk. Slowly add your cream and earl grey mixture, lightly beat. Pour filling into the prepared spring form pan.
Wrap the base and half way up the sides of your cake tin with tin foil and place into a large baking tray, add around 5cm of hot water to help cook the cake evenly.
Bake in the oven for 45 minutes, remove and allow to cool for an hour.
Whilst waiting for your cake to cool make your topping by chopping half your punnet of strawberries and placing into a bowl, add icing sugar, lemon just and half the content of your Earl grey tea bag. Mash together with a fork.
Once your cake is completely cooled remove from the cake tin, top with your mashed strawberries and then decorate with the rest of the strawberries, ENJOY!Read More...
