Chilli, Cheese & Beer Dip

Yes you heard right all the good thing’s in life in one glorious dip. This beauty is perfect for sharing, or hiding in a couch fort and devouring alone, the choice is yours.


Serves 5 or 1 person – depending how Summer body you want to get!



2 x Tbs. of Green Bravoleum Olive oil

1 x Brown onion – chopped finely

1 x Green chilli – chopped finely

2 x Cloves of garlic – chopped finely

1 x Tbs. dried chilli

1 x tsp. salt flakes

1 x Heaped Tbsp. of Smoked Paprika

1 x Bottle of Larger beer (we used Feral)

2 x cups of Morzorella

1.5 x cups of strong cheddar

1 x tbsp. of flour


To serve

In a large suasapan add your Green Bravoleum, onion, chilli, garlic, dried chilli & salt. Cook on a medium heat for 10 minutes. Add your smoker paprika and cook out for a minute or two. Pour in the beer slowly and stir about, make sure you get anything that may have stuck to the bottom, cook out the booze on a medium heat for 5 minutes, add both your cheeses & flour – stir vigorously, you don’t want flour lumps! Cook till the cheese is melted and the dip is thickening up.


Serve hot with a bit of coriander and cherry tomato, or even better bacon bits.
